White Chicken Chili
Ingredients
1/2 white onion, diced
1 large poblano pepper, diced
6 cloves of garlic
2 tbsp cumin
2 jars salsa verde (I like to use one classic and one fire roasted)
1 can hatch chiles
1 can pinto beans
1 can sweet corn
2 cups chicken stock
2 rotisserie chicken breasts, shredded
4oz cream cheese
cilantro, serranos, avocado, & lime tortilla chips
Method
Sauté onion and poblano in olive oil until soft.
Add in garlic and cumin, cooking until fragrant.
Pour in salsa, hatch chiles, beans, and corn.
Stir in shredded chicken and cream cheese.
Simmer for 15 minutes until flavor is combined.
Season with additional salt and cumin as needed.
Top with cilantro, serranos, avocado, and tortilla chips!
