Chicken Parmesan Meatballs with Zucchini Noodles

Ingredients

Meatballs

  • 1lb ground chicken

  • 1/2 cup breadcrumbs (I like to use Simple Mills rosemary crackers, ground in the blender)

  • 1/2 cup grated Parmesan cheese

  • 1 tbsp Italian seasoning

  • 3 garlic cloves, minced

  • 1 container (8oz) bocconcini mozzarella

  • salt to taste

Zucchini Noodles

  • 5-6 medium zucchini, spiralized

  • 1 tbsp olive oil

  • 4 cloves of garlic, minced

  • 1 jar of your favorite tomato sauce

Method

  1. Mix ground chicken with seasonings, cracker crumbs, and cheese. 

  2. Make meatballs: stuff each with 1 bocconcini. 

  3. Sear meatballs for 2-3 minutes on each side in evoo until golden brown. 

  4. Pour tomato sauce over meatballs and bake for 25-30 minutes.

  5. Top with more parm, basil, and serve with noodles (I used zucchini noodles here) of choice!
