Chicken Parmesan Meatballs with Zucchini Noodles
Ingredients
Meatballs
1lb ground chicken
1/2 cup breadcrumbs (I like to use Simple Mills rosemary crackers, ground in the blender)
1/2 cup grated Parmesan cheese
1 tbsp Italian seasoning
3 garlic cloves, minced
1 container (8oz) bocconcini mozzarella
salt to taste
Zucchini Noodles
5-6 medium zucchini, spiralized
1 tbsp olive oil
4 cloves of garlic, minced
1 jar of your favorite tomato sauce
Method
Mix ground chicken with seasonings, cracker crumbs, and cheese.
Make meatballs: stuff each with 1 bocconcini.
Sear meatballs for 2-3 minutes on each side in evoo until golden brown.
Pour tomato sauce over meatballs and bake for 25-30 minutes.
Top with more parm, basil, and serve with noodles (I used zucchini noodles here) of choice!
