Pumpkin Spice Overnight Oats

Ingredients

  • 1/2 cup pumpkin purée

  • 1/2 cup Greek yogurt (I use 2% milkfat)

  • 2/3 cup rolled oats (gluten free if needed)

  • 1/3 cup chia seeds 

  • 2 cups milk of choice (I use 2% milk)

  • 1/4 cup maple syrup (add more if you like things sweeter!)

  • 1 tsp cinnamon

  • 1 tsp pumpkin pie spice 

  • 1/2 tsp vanilla extract

  • pinch of salt

Method

  1. Mix pumpkin, greek yogurt, spices, maple syrup, and milk of choice in a large bowl or tupperware.

  2. Add in chia seeds and rolled oats.

  3. Mix ingredients and let sit in the fridge overnight, or at least 4 hours.

  4. Add additional milk depending on desired consistency.

  5. To serve: top with more greek yogurt, toasted nuts, cinnamon, and a drizzle of maple syrup
