Pumpkin Spice Overnight Oats
Ingredients
1/2 cup pumpkin purée
1/2 cup Greek yogurt (I use 2% milkfat)
2/3 cup rolled oats (gluten free if needed)
1/3 cup chia seeds
2 cups milk of choice (I use 2% milk)
1/4 cup maple syrup (add more if you like things sweeter!)
1 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp vanilla extract
pinch of salt
Method
Mix pumpkin, greek yogurt, spices, maple syrup, and milk of choice in a large bowl or tupperware.
Add in chia seeds and rolled oats.
Mix ingredients and let sit in the fridge overnight, or at least 4 hours.
Add additional milk depending on desired consistency.
To serve: top with more greek yogurt, toasted nuts, cinnamon, and a drizzle of maple syrup
