Best Ever Gluten Free Zucchini Bread
Ingredients
2 medium zucchini, grated
1 banana, mashed
1/2 cup almond butter
2 eggs
2 tbsp coconut oil
2/3 cup maple syrup
1 1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
1/2 tsp salt
1 1/4 cups almond flour
1/2 cup oat flour
1/2 cup chocolate chips + more to top
Method
Preheat oven to 350 and line a loaf pan with parchment.
Mix wet ingredients together (everything besides zucchini, almond flour, and oat flour).
Squeeze excess moisture from zucchini with a paper towel and mix in.
Mix in dry ingredients until just combined.
Stir in chocolate chips, feel free to add more if you like it extra chocolatey.
Top with walnuts and more chocolate chips.
Bake for 45 min to 1 hour until a toothpick comes out clean.
Let cool for at least 1 hour, slice, and enjoy!
