Pickle Lover’s Tuna Salad
Ingredients
1 can tuna (5oz)
2 tbsp finely diced celery
2 tbsp finely diced red onion
2 tbsp finely diced pickles
1 heaping tbsp sweet pickle relish
1 heaping tbsp yellow mustard
1 heaping tbsp mayo
1 tbsp pickle brine
squeeze of lemon juice
salt & pepper to taste
Method
Mix together mustad, mayonaise, relish, pickle brine, and lemon juice in a bowl.
Drain liquid from tuna.
Add tuna to dressing, using two forks to break apart into small pieces.
Mix in diced celery, onions, and pickles.
Season with salt and pepper to taste.
Enjoy!
I like to serve over chopped iceberg and arugula (dressed in a lemon dijon vinaigrette) with Persian cucumbers and banana peppers. It’s also great on toast!! Or straight from the bowl with some crackers!!
