Greek Corn Salad with Grilled Chicken
Ingredients
Salad
1 bunch curly kale, shredded
1 cup grilled corn (I used the frozen fire roasted corn from Trader Joe’s)
1/2 cup red onion, finely diced
1 1/2 cups Persian cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup kalamata olives, sliced
1/2 cup feta cheese
lots of fresh dill and basil
Dressing
1/3 cup olive oil
1 tbsp dijon mustard
2 tbsp red wine vinegar
juice of 1 lemon
2 tsp Italian seasoning
salt & pepper to taste
Method
Prepare dressing by shaking all ingredients together in a mason jar.
Shred kale. Double wash using a salad spinner
In a large bowl, massage dressing onto kale and let sit while prepping the rest of ingredients.
Prepare remaining vegetables: slice olives, dice onions, dice cucumnbers, halve cherry tomatoes, and chop herbs.
Toss produce and feta cheese with kale until everything is combined.
Top with grilled chicken or other protien of choice—chickpeas or grilled shrimp would also be great!
